Mushroom and Garlic Pizza



4 tablespoons extra-virgin olive oil

4 garlic cloves, finely chopped

5 ounces shiitake mushrooms

8 ounces blanched mushrooms

10 ounces shredded mozzarella cheese

Prepared pizza crust

Salt for taste


4 (2 slices per person)


  1. Fire up your oven as you usually would (commercial ovens at 700-800 F). Brush the pizza crust with 2 tablespoons of the olive oil and sprinkle with the garlic.
  2. Thinly slice the shiitake and white mushrooms. Heat the remaining olive oil over high heat in a large skillet and sauté the mushrooms until golden, for about 6-8 minutes. Season with salt.
  3. Sprinkle the dough with some mozzarella cheese, then the mushrooms and then mozzarella cheese again. Sprinkle a little more salt over the topping and put the pizza in the oven.
  4. Bake until the topping is golden and bubbly, for about 8-10 minutes.
