Caprese Chicken



1 lb. boneless skinless chicken breasts

1 tbsp. extra-virgin olive oil

Ground black pepper


1/4 cup balsamic vinegar

2 cloves garlic, minced

2 tbsp. fresh basil

4 slices mozzarella

1 pint grape tomatoes, halved




  1. Over medium-high heat, heat oil. Season chicken with salt and pepper and cook for about 6-8 minutes on each side. Set aside.
  2. Add balsamic vinegar to pan and then add the garlic. Add tomatoes and add a pinch of salt. Let simmer for about 5 to 7 minutes, then put in basil.
  3. Put chicken back in pan and add tomatoes and then mozzarella. Cover with a lid.
  4. Put tomatoes on top of chicken to serve.
