Tuscan Sausage Rigatoni

Ingredients

  • 12 ounces rigatoni pasta
  • 1 teaspoon olive oil
  • 1 pound ground sausage
  • 2 tablespoons butter
  • 4 teaspoons minced garlic
  • 2 tablespoons flour
  • 1 ½ cups chicken broth
  • 1 cup heavy cream
  • ⅓ cup freshly grated parmesan cheese
  • 2 teaspoons salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • 12 ounces roasted red bell peppers

Directions

  1. Cook pasta per instructions on the package. Drain and toss with 1 teaspoon olive oil. Set aside.
  2. In a pan, heat sausage until brown, for about 5-6 minutes as you break it apart into chunks.
  3. Melt butter in this same pan. Stir in garlic until fragrant.
  4. Add in the flour, then the chicken broth. Stir in the cream, parmesan cheese, red pepper flakes. Then season with the salt and pepper.
  5. Now, add in the pasta, sausage, roasted red peppers, and spinach.
  6. Let this simmer for several minutes, then garnish with herbs and fresh black pepper.
