Stuffed Baked Potato Skins



6 small potatoes

2 tablespoons olive oil

1 1/4 cup shredded cheddar cheese

3/4 cup bacon pieces

3/4 cup sour cream

1/3 cup green onions

Salt and pepper to taste




  1. Preheat oven to 400 degrees F.
  2. Coat a baking sheet with cooking spray or oil
  3. Punch several holes with a fork and bake them for about an hour.
  4. Cut each potato in half. Remove the insides leaving 1/2 inch.
  5. Increase the oven temperature to 450 degrees F. Put some olive oil on the skins and then season with salt and pepper.
  6. Fill each skin with some cheese and top with the bacon topping. Put back in the oven and bake for about 3 more minutes.
  7. Put a dollop of sour cream onto each potato. Sprinkle with green onions. Serve immediately.
