Spaghetti with Clams and Garlic



1 lb. dried spaghetti

1/2 cup extra virgin olive oil

2 shallots, sliced

6 cloves garlic, chopped

2 lbs. clams, washed thoroughly

1/2 cup fresh parsley, chopped

1/2 cup dry white wine

2 tbsp. unsalted butter, cubed

Sea salt and ground black pepper

1 lemon, zested (for garnish)




  1. Bring to a boil, in a large pot, 1 1/2 gallons of slightly salted water. Add pasta and stir continuously at first. Cook for 8-10 minutes.
  2. Heat the olive oil in a large sauté pan. Add shallots and garlic and sauté about 3 to 4 minutes until soft. Add the clams and wine. Let this simmer for around 8 minutes. Add 2 tablespoons chopped parsley.
  3. Drain pasta in a colander. Put pasta in the pan with the clams.
  4. After pouring the pasta in a serving bowl, zest lemon over top. Add remaining parsley to garnish.
