Short Rib BBQ Sandwich



2 lbs. short rib

1 onion, chopped

1 carrot, chopped

4 cloves garlic, peeled and halved

12 oz. beer

1/2 cup beef stock

2 tsp steak seasoning

Olive oil

1/2 cup BBQ sauce

Sandwich rolls




  1. Place chopped onion, carrot, and garlic in a slow cooker.
  2. Coat large sauce pan with olive oil. Brown each side of the short ribs for about 2 minutes.
  3. Put the ribs in the slow cooker. Add beer and then beef stock until half of each rib is covered with liquid. Add the steak seasoning.
  4. Cook for about 8 hours on low.
  5. Remove ribs and peel apart with a fork.
  6. Add BBQ sauce and mix together with meat.
  7. Serve on the sandwich rolls.
