Ricotta Pie

Ingredients

  • 12 large eggs
  • 2 cups sugar
  • 2 teaspoons vanilla extract
  • 3 pounds ricotta cheese
  • ¼ cup miniature semisweet chocolate chips
  • Confectioners sugar for topping (optional)
Crust
  • 4 cups all-purpose flour
  • 5 teaspoons baking powder
  • 1 cup sugar
  • 1/2 cup shortening
  • 1 tablespoon shortening
  • 4 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk

Directions

  1. For the filling, beat the dozen eggs, 2 cups sugar and vanilla extract in a bowl. Mix in the ricotta cheese and the chocolate chips.
  2. Combine the flour, baking powder, and 1 cup sugar. Add in 1/2 cup and 1 tablespoon of shortening until the batter has crumbs. Add in 4 beaten eggs and 1 teaspoon vanilla extract. Create 4 balls of dough and wrap in plastic. Put this in the fridge for around 30 minutes.
  3. Preheat oven to 325 degrees and grease 2 deep pie pans.
  4. Roll out 2 of the balls into each of the pie pans. Roll out the other 2 balls of dough and cut each into 8 narrow strips for the top of the crust.
  5. Pour the ricotta mixture into the crusts. Top with 8 strips of dough. Brush top of pie with milk. Place some foil pieces on the edge of crust.
  6. Bake for 20 to 25 minutes and then take away the foil from the edges. For an even bake, rotate the pies. Continue to bake for another 25 to 30 minutes.
  7. Keep refrigerated up until serving. As an option, you can sprinkle with confectioners sugar.
