Potato Salad with Egg



5 lbs. red potatoes

4 boiled eggs chopped

1/2 medium onion, chopped

1 stick celery, chopped

2 cups mayonnaise

2 tbsp. sugar

2 tbsp. dried parsley

2 tsp. mustard

1 tsp. salt

1 tsp. cider vinegar

Pepper to taste




  1. Put potatoes in a large pot and fill with water. Bring to a boil, then reduce heat slightly, as they sit covered for 15 minutes.
  2. Drain the potatoes and cut in cubes.
  3. In a large bowl mix together the potatoes, onion and eggs. In a separate smaller bowl, combine the mayo, celery, sugar, parsley, mustard, salt, cedar vinegar, and pepper. Pour over potatoes.
  4. If possible, let cool in refrigerator for several hours.
