1 1/2 cup small, diced onion
2/3 cup small, diced celery
2/3 cup small, diced carrot
¼ cup EVOO
6 sprigs of thyme
4 cups vegetable or chicken broth
Sea salt and fresh black pepper to taste

3 Quarts
Directions
In a thick bottom pot on low heat add onion, celery, EVOO,and carrot. Cook till they are translucent.
Add the thyme and lentils. Cook for 2 minutes and then add the broth.
Cook till lentils are tender and season with salt and pepper.
Serve with crusty bread and enjoy!
