Lentil Soup

Ingredients

  • 1 1/2 cup small, diced onion
  • 2/3 cup small, diced celery
  • 2/3 cup small, diced carrot
  • ¼ cup EVOO
  • 6 sprigs of thyme
  • 4 cups vegetable or chicken broth
  • Sea salt and fresh black pepper to taste

3 Quarts

Directions

  1. In a thick bottom pot on low heat add onion, celery, EVOO,and carrot. Cook till they are translucent.
  2. Add the thyme and lentils. Cook for 2 minutes and then add the broth.
  3. Cook till lentils are tender and season with salt and pepper.  
  4. Serve with crusty bread and enjoy!
