Lemon Arugula Chicken Parmesan



4 cups Shaved Parmesan cheese

3 ounces baby arugula

4 tablespoons freshly squeezed lemon juice

1/4 teaspoon salt

Pinch of ground black pepper

1/4 cup olive oil

3 breaded chicken breast




  1. Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large sauté pan. Heat breaded chicken breasts on medium-low heat for 5 to 6 minutes on each side, until hot.
  2. Place the arugula in a large bowl. In a small bowl whisk together the lemon juice, olive oil, salt, and ground pepper. Pour to cover arugula and toss well.
  3. Put some arugula on top of each breaded chicken breast. Shave the chunk of Parmesan on the arugula.
