Kale Salad



3 tbsp. olive oil

1 shallot, sliced

3 cloves, minced

1 cup dried cranberries

2 Tbsp. red wine vinegar

2 teaspoons honey

juice and zest of half a lemon

Salt and pepper to taste

1 bunch kale, sliced

1/4 cup sliced almonds

1/4 cup crumbled goat cheese

Optional 1/4 cup walnuts




  1. Heat oil in a large sauté pan over medium-high heat. Add shallot and sauté for at least 5 minutes. Add garlic and sauté for another minute.
  2. Add cranberries, red wine vinegar, honey and lemon juice and zest, and stir to mix. Add a sprinkle of salt and pepper to season.
  3. In a large bowl, mix the kale with olive oil and squish kale with your fingers for 1 minute until tender. Add the cranberry mixture and almonds.
  4. Serve with crumbled cheese.
