Grilled Scallop Zucchini Skewers

Ingredients

  • 1 clove garlic, minced
  • 2 tbsp. lemon juice
  • 2 tbsp. olive oil
  • 1 tbsp. chives minced
  • 1 tbsp. dill minced
  • 1 tbsp. parsley minced
  • sea salt and black pepper, to taste
  • 1 pound scallops
  • 1 red bell pepper, cut into 1-inch pieces
  • 2 zucchini, cut into 1/2-inch pieces
  • 3 scallions, cut into 2-inch long pieces
  • Lemon into wedges to serve

Directions

  1. Heat up a greased grill on high heat.
  2. In a bowl, combine the garlic, lemon juice, olive oil, parsley, dill, and chives.
  3. Add in the scallops, bell peppers, zucchini and scallions. Combine.
  4. Put each- scallops, bell pepper, zucchini and scallions, onto the skewers, alternating types.
  5. Change the heat on the grill to medium-high. Grill for about 3 to 4 minutes until vegetables are slightly charred and scallops are barely opaque.
  6. Serve with lemon wedges.
