Chocolate Soufflé



4 tbsp. unsalted butter

1/3 cup granulated sugar

8 ounces of chocolate

1 tablespoon orange flavored liqueur (optional)

1/2 tsp. vanilla extract

1/8 tsp. table salt

6 large eggs, separated, plus 2 extra large eggs whites

1/4 teaspoon cream of tartar




  1. Preheat the oven to 375 degrees F.
  2. Butter a 2-quart  then coat the dish evenly with 1 tablespoon sugar and refrigerate until ready to use.
  3. In a saucepan simmer 1 inch of water. Melt the chocolate with 4 tablespoons butter, stir the mixture occasionally until smooth.
  4. Stir in the liqueur, vanilla, and salt. Remove from the heat and let cool.
  5. On medium speed, beat the egg yolks and 1/3 cup sugar until thick and pale yellow, for about 5 minutes.
  6. Fold the beaten egg yolk mixture into the chocolate mixture.
  7. In a separate bowl, on medium-low speed, beat the egg whites and cream of tartar until foamy, about 1 minute.
  8. Transfer the mixture to the prepared dish and bake for 25-30 minutes.
  9. Serve the soufflé immediately while hot.
