Boneless Buffalo Chicken Bites



2 lb. boneless, skinless chicken breast (diced into 2 in. pieces)

½ cup cornstarch

2 tsp salt

1 tsp. black pepper

1 tsp. onion powder

1 tsp. garlic powder

1/2 tsp. paprika

3 tbsp. olive oil

1 cup 212 Hot Sauce

3 tbsp. butter




  1. Put the cornstarch, salt, onion powder, garlic powder, pepper, and paprika all in a large bowl. Mix well until combined.
  2. Add the chicken to the mixture. Combine until evenly coated.
  3. Heat a large pan over medium-high heat. Add some olive oil and when heated, add half of the chicken to the pan, without overlapping them. Cook for around 5 minutes or until the breading is a golden brown. When done, flip them over and do the same. When finished, put them on a plate and repeat with the remaining.
  4. Add butter to the pan. Add the 212 Hot Sauce to the butter and combine.
  5. Add the chicken to the hot sauce and butter mixture and coat all pieces in it. Cook for an addition 4-5 minutes until the chicken is cooked through and the sauce gets thicker.
  6. Serve immediately with a dipping sauce such as blue cheese or ranch.
