Beer Battered Calamari



1 lb. calamari

Beer Batter

2 cups all purpose flour

1 tbsp. olive oil

1 1/2 tsp salt

1/4 teaspoon ground cayenne red pepper

1 cup beer

Vegetable oil for frying


1 cup mayonnaise

1 clove garlic, peeled

1/2 lemon juiced

2 tbsp. fresh basil, chopped

Salt and pepper to taste




  1. Put the calamari in a large bowl. Add 2 chopped garlic cloves, the lime juice, 1/2 teaspoon salt and black pepper to taste. Put in the fridge for a half hour to marinate.
  2. In a large bowl, mix 1 cup of the flour, the olive oil, 1 1/2 teaspoons salt, the red pepper and black pepper to taste. Slowly add beer. Refrigerate for 30 minutes.
  3. In food processor, place mayonnaise, 1 garlic clove and the lemon juice. Process until blended well. Season with salt, pepper and basil. Put in fridge.
  4. In a large saucepan, heat 2 inches of vegetable oil. In a small bowl place the 1 cup of flour. Dip the calamari in the flour and coat with beer batter. Fry calamari until golden brown. Lay on paper towels to soak up extra oil.
  5. Serve with the mayonnaise sauce.
