Ingredients
Dough
- 3 ¾ Cups of Domenico Vitale Tipo 00 Pizza Flour
- 1 ⅓ Cup of warm water
- 1 package of rapid yeast
- 2 tbsp Vitale extra virgin olive oil
- 1 tbsp sugar
- 1 tbsp salt
Pizza Recipe
- 3 tbls Marino freshly grated parmigiano reggiano cheese
- 1 can Vitale Italian tomatoes, peeled, seeded, chopped and drained
- ¾ lb Vitale fresh mozzarella loaf
- 10 fresh basil leaves
- Salt and freshly ground black pepper to taste
Dough Preparation
Start the yeast by adding the warm water, sugar and yeast; After 10 min, begin adding the Domenico Vitale Tipo 00 Pizza Flour and salt; Once all combined and mixed well with a bread hook (10 mins), roll into a ball; Put 2 tbsp Vitale extra virgin oil olive in a bowl and coat dough, cover and let rise for about 60 minutes; Once dough has risen, punch the air out and cut into half; Divide dough into two balls and let rise overnight. After sitting, they are ready to be flattened and shaped into a pizza crust.
Preheat oven to 555 degrees F with a large baking stone and let it stay at that temperature for 30 minutes.
Roll or stretch dough out until 16 inches in diameter using either a rolling pin on a lightly floured work surface or by rotating the pizza while it's draped over your fist until about ⅓ inch thick. Place each crust on a 16-inch solid pizza pan or baking stone sprinkled with cornmeal to prevent sticking or use a 16-inch perforated pizza pan, making sure the border of the dough is a little higher than the center. Make indentations all over the pizza with your fingertips and grease top, including borders, with Vitale extra virgin olive oil. Sprinkle Marino grated parmesan cheese evenly over the two pizzas, leaving a 1-inch border all around, then evenly distribute the Vitale Italian tomatoes and Vitale mozzarella. Lay basil leaves over the top and oil the top again. Season with salt and pepper.
Bake until the borders are charred in places and the top is dappled brown in certain places on the cheese, 8 to 9 minutes. Remove from the oven, let cool a minute or two, and serve.
